Masala Bhat

Masala Bhat is an Maharashtrian Dish. In this recipe the rice is assorted with vegetables.            
                                                                                                                                                                   INGREDIENTS:10/2cup basmati rice                                                                
                            Salt to taste
                            8 to 10 tindli
                            6 to  7 dry red chili
                            2 to 3  tbsp coriander seeds
                            1/2 cup dry coconut grated
                            1 teaspoon cumin seed  
                            4 tbsp oil
                            5 to 6 cloves
                            2 to 3 green cardamom
                            2 Bay leaves
                            1 teaspoon turmeric powder
                            10 cashewnuts roasted
                            1/4 bunch of coriander leaves
                            2 tablespoon coconut scraped
                            Brinjal cubed 3 to 4 medium
                            Carrots cubed 2 to 4 medium                                                      
                                       
 METHOD: Soak rice in water for thirty minutes.Drain and set aside.Soak the brinjal cubes in salt water.Cut tendli into four pieces length wise.Roast whole red chili,coriander seeds,grated dry cocount and cumin seperately.and then grind into fine paste.with a little water.Heat oil in a pan. Add cloves, cardamom, bay leaves and stir fry for few seconds.Add vegetables and turmeric powder cook further for two to three minutes.Add rice and mix gently.Add three cups of boiling water.Season with salt.Cook on high heat for five minutes stirring frequently.Bring to boil and then reduce heat and continue to cook until rice is done and all the water is absorbed.Remove from heat.and serve hot with roasted cashewnuts,chopped coriander leaves
and scraped coconut.
